      This solid collection of recipes, authorized by Instant Pot, shows owners how to get the most out of their appliance. The recipes range from classics such as French onion soup, beef burgundy, and sloppy joes to surprises such as Thai green curry chicken, chipotle corn and sweet potato chili, and a savory blue cheese appetizer cheesecake. Most recipes here call for easily sourced ingredients and minimal prep on the part of the cook. Some dishes, however, call for other appliances (the frites in mussels frites, for example, are baked in an oven), while other dishes that rely solely on the Instant Pot are prepared in stages using different settings on the device, which might end up actually increasing prep time, such as for the citrus prawns with orange-cashew rice. Dishes that rely on the appliance’s core function as pressure cooker (collard greens with smoked ham hocks and sweet onions, pork chile verde, pressure-cooked beef broth, etc.) are where the book truly shines.
